1: Break out your large skillet and over medium heat combine the mushrooms, onions, sherry, canna-butter, parsley and saute this until all the mixture is nice and thick like a paste. Next cover the top of each fillet with the mixture.
2: Partially thaw the puff pastry sheets and roll out pieces thin enough to cover the top, sides and bottom of each fillet. Place the fillets on a baking sheet and preheat your oven to 425 degrees F.
3: Now bake uncovered in the preheated oven for 25 minutes, they will be rare but keep in mind they will continue cooking while dish is sitting.
